Chicken in Orange Curry Sauce

2 c cooked rice with beaten egg mixed in
2 c cooked cubed yams (canned works great)
2-3 cups cooked cubed chicken (white or dark – whatever’s in the frig!)
2 T honey
1 T curry powder
2 minced garlic cloves
1 t each – cinnamon & nutmeg
.5 c orange juice concentrate
Juice of 2 limes
.5 -3/4 c water
2 tsp Salt (or 1 tsp regular & 1 tsp garlic salt) to taste
1 tsp black pepper
.5 c prepared orange juice (add only if it seems a bit dry)
2 oranges peeled & sectioned

Place rice in bottom of deep casserole dish. Add yams, then chicken. Combine remaining ingredients (except oranges) and pour over dish. Add orange sections on top. Heat in 350-degree oven until hot.
