BBQ Chicken Salad
1 chicken breast, cooked
1 tsp. – 1 T Aunt Fossie’s Chicken BBQ Sauce
1 T celery, diced
1 tsp. – 1 T mayonnaise
Salt & Pepper to taste
Remove bones and skin (if not already done) from cooked chicken breast. Chop or shred. Add 1 teaspoon of Aunt Fossie’s Chicken BBQ Sauce and mix, if still very dry add another teaspoon. Most likely won’t need more than 1 tablespoon. Refrigerate for 1 hour or more so that the sauce is completely absorbed in the chicken. In a small bowl add celery to the chicken and add mayo 1 teaspoon at a time, mixing well. This 1 breast will make about 2 full-sized BBQ chicken salad sandwiches or about 4-6 rolls or biscuits.
Party idea: put the BBQ Chicken Salad in filo cups and serve. Elegant and different.
