Fuji Apple Chicken Salad

Dice an unpeeled, cored Fuji apple. (If not serving immediately, coat lightly with lemon juice.) Dice and add a more or less equal amount of cooked white meat chicken coarsely diced. Add approximately ¼ c broken pecans. Stir in enough mayonnaise to bind.

Optional – Add small slivers of swiss cheese to taste.

Can be easily adjusted to the amount of chicken you have on hand. It is important to the taste to use Fuji apples.
