Hungarian Chicken with Noodles

3 slices bacon (preferably thick sliced), cut into small pieces
1 Shallot sliced thinly
½ lb mushrooms (OK to use a variety of types!) cleaned & sliced thin
1-2 pieces of chicken cut into large cubes
Approx. 1T paprika
1 small can (14 oz or less) diced tomatoes
½ c sour cream (low fat is fine)
2 c cooked noodles (medium wide)

Saute bacon in medium pan until well cooked. Add shallots & mushrooms and sauté gently until soft, about 10 minutes. Add ½ the chicken pieces, sprinkling with paprika and browning it.  Then add rest of chicken and paprika.

When all chicken is browned, add tomatoes and gently simmer until meat is tender, at least 20 minutes.

Before serving, add salt and pepper to taste. Remove from heat and stir in the sour cream.

Serve over warm noodles and top with extra sour cream. Serves 2.
