Sweet Crispy Chicken Tenders (very kid-friendly)
1/3-1/4 c honey
1T Apricot preserves
1 ½ c panko bread crumbs
1 lb chicken breast tenders, or white meat cut into “nugget” size.
Preheat oven to 375. Mix honey & preserves together, dip chicken pieces to cover then dredge in panko crumbs. Cook 15 minutes on each side if chicken is uncooked. If cooked, heat until brown and crispy (may want to increase oven temp to 400 but watch carefully). Serve with a dip of the honey & preserves, thinned out with a few drops of orange juice.
