Kickiní Chile Chicken Sandwich

1 leftover chicken breast, sliced into 2 cutlets. Place in 300 oven to warm and to melt
1 slice of cheese (pick your favorite or whatever’s in the frig!)
Combine, cover & refrigerate:
1 T Dijon mustard
1 -1 ½ T Mayonnaise
1 T Canned green chiles, chopped
¼ tsp Southwest seasoning
1 tsp minced cilantro

When chicken is warm & cheese melted, spread mayo/mustard mixture on both sides of toasted onion roll. Top with lettuce, tomato, red onion, chicken & cheese. For a real treat, add French fried onions (canned is fine) on top of cheese. Serves 1-2.
