Country Ham Stuffed Chicken Breasts

(This is perfect for those frozen individual serving chicken breasts – make as few or as many as you’d like!)

1 boneless/skinless chicken breast, uncooked
1-2 T. Melted butter, divided
1 slice country ham (yep, the salty kind which provides its own seasoning!)
¼ tsps. Sugar (regular or brown, whichever you have)
¼ - ½ c breadcrumbs
Dash sage
2 tsps. Parsley

Pound chicken breast to about ½ inch thickness. Brush with up to HALF the melted butter. Place ham slice on top.
Mix remaining ingredients together and spread about 1-2 T. on top of ham. Roll up chicken breasts and place in baking pan coated with cooking spray. Drizzle with remaining butter and remaining breadcrumb mixture. Bake at 350 for about 45 minutes.
