1 chicken breast
1 tsp. – 1 T Aunt Fossie’s Chicken BBQ Sauce
.5 c coarsely chopped tomatoes
.5 c. shredded lettuce
a few sliced black olives (optional)
.5 Jalapeno pepper, chopped (optional)
.5 c shredded cheese
.5 c drained & rinsed black beans (optional)
.5 c salsa
hot sauce to taste
dollop sour cream
If chicken is already cooked: Remove bones and skin (if not already done) from cooked chicken breast. Chop or shred. Add 1 teaspoon of Aunt Fossie’s Chicken BBQ Sauce and mix, if still very dry add another teaspoon. Most likely won’t need more than 1 tablespoon. Suggestion but not a requirement: Refrigerate for 1 hour or more so that the sauce is completely absorbed in the chicken.
If chicken is raw: Bake chicken at 350 degrees for 15 minutes. Pour on some Aunt Fossie’s before you cook it. Better yet, let marinade for an hour before cooking. It’s up to you and what’s in your frig!
Place chips on heat-proof dinner plate or platter. Layer chicken, cheese, peppers, olives, beans and hot sauce. Microwave or heat in the oven until the cheese begins to melt. Remove and top with lettuce, tomatoes, salsa and sour cream and serve.
You can make this feed more people by adding more of the vegetables and cheese. Make small portions on individual plates to meet different taste palates!
