Tex-Mex Avocado Wrap
2 small flour tortillas
2-3 oz. sliced as thinly as you can, rotisserie chicken (OK if it comes out a bit shredded)
½ c cubed ripe avocado, peeled & seeded
¼ c. drained tomato salsa (as hot or as mild as you like it)
Spray tortillas with cooking spray (I prefer the olive oil kind but use what you have). Pile chicken on each tortilla. Top with avocado. Drain salsa and spoon on avocado. Top with lettuce. Roll wraps and cut in half.
The draining part is very important or it will be too soggy. Very good and easy to make. OK to use flavored tortillas for variety.
