Chicken, Fresh Tomatoes & Pasta

(makes a little or will feed an army!)

This recipe is for 1-2 people, but can be easily and quickly enlarged if you have a group of hungry people drop by for dinner. Plus it’s incredibly easy!
1 large ripe tomato, peeled*, seeded & crushed (OK to use your hands!)
1 T. extra virgin olive oil
Salt & Pepper to taste
3 oz. pasta (short kind or bowtie is best)
2 oz. Brie, room temperature, cut into small pieces
1 cooked, chopped chicken breast

Add oil, salt & pepper to tomatoes. Toss with rest of ingredients. Sprinkle basil on top. Serve.

*Easiest way to peel a tomato: put ripe tomato in boiling water for 15 seconds. Remove. OK to keep in refrigerator before removing skins.
