Chicken Wonton Soup

4-oz package shitake mushrooms, stemmed. Cut caps into thin slices
1 tsp. vegetable oil
3 c. chicken broth (Fat free or low sodium is great to use)
1 c. chicken mini wontons (Trader Joe’s has them but check your local store)
1 T. low salt soy sauce
¼ tsp. sesame or chili oil, optional
2/3-1 c. coarsely chopped cabbage
1 green onion, thinly sliced
½ c. cooked cubed chicken (white or dark, doesn’t matter)

In saucepot, heat vegetable oil. Add mushrooms and sauté until soft. Pour in broth and bring to a boil. Add wontons and cook about 3 minutes. Reduce heat and add soy sauce, oil, cabbage, green onion and cooked chicken. Cook for about 2 minutes and serve.
