Honey Chicken Thighs with Potatoes

1/3 c. honey
Zest of 1 orange
2 T. olive oil
Salt & pepper to taste
½ tsp. garlic powder
1 ½ tsps. Ground cardamom
1 pound new potatoes, cut in halves or quarters
4 uncooked chicken thighs

Whisk together 1 T oil with other ingredients (excluding chicken and potatoes).

Toss potatoes with remaining 1 T. oil and a bit of salt and pepper. Arrange in even layer in small roasting pan. Brush chicken thighs with honey mixture under and over the skin. Arrange chicken over the potatoes.
Cover and roast at 400 degrees for 35 minutes. Uncover and continue roasting for 15 minutes.

For a even yummier sauce, remove chicken and potatoes and keep warm. Heat liquid to simmer and let thicken for about  2 minutes. Pour over chicken & potatoes. Enjoy.
