Chicken Pot Pie Appetizers

(This is a great way to use bits of chicken you may have in your freezer. Dark or white meat is fine! Also, this works great to cook in batches so you have hot appetizers coming out of the oven at set intervals.)


3 packages frozen Phyllo cups
1 8-oz cream cheese, softened
2 egg whites
½ tsp. thyme
1/8 tsp. paprika
½ tsp. salt
¼ tsp. pepper
½ c. baby peas
1 carrot, finely grated
2 c. finely chopped cooked leftover chicken
¼ c. Parmesan cheese

Arrange phyllo cups on baking sheet.

Whisk together cheese, eggs & spices. Add chicken and vegetables. Spoon about 1 tsp. (+/-) of filling into each cup and sprinkle with parmesan cheese. Bake for 15 minutes at 350 and serve immediately.
