1 boneless, skinless chicken breast, chopped or sliced
2 T wok oil, preferably unseasoned
1 –2 c. chopped veggies (i.e. carrots, celery, grean beans, baby corn, mushrooms, or whatever combination works best for you – or whatever’s in the frig!)
2 -3 T. Aunt Fossie’s Chicken BBQ Sauce
2 c cooked rice
Heat oil in wok until hot, add BBQ Sauce and mix until smooth. Add chicken and cook until almost done. (Add more sauce if you’d like.) If you prefer, add some hot sauce, salt and/or pepper. Add vegetables and stir to cook for 1-3 minutes more or to desired tenderness.
You can make this vegetarian by omitting the chicken and adding tofu, nuts or even more veggies. Very good!
