Thyme & Tarragon Chicken

2 uncooked chicken breasts (or 4 thighs or even a combination)
½ tsp. salt
Dash pepper
1 tsp. dried tarragon
¼-1/2 tsp. dried thyme
1 T. fresh lemon juice
1 T. tarragon vinegar
1 T. parsley
Thin lemon slices and more parsley for garnish
(Note: if you are using fresh tarragon & thyme, increase amount by 3X)

Place chicken skin-side up in shallow foil-lined baking pan. Sprinkle spices, lemon juice & vinegar on chicken. Cover with foil and bake for 20 minutes at 375. Uncover and cook for another 15-20 minutes until done. Serve with pan juices and garnish.
